Most Mezcal is made from agave cooked with wood, often imparting a smoky character. But for some families, the tradition is to cook with steam. That’s the case with the Salmiana agave used by Malena Villasuso, granddaughter of Don Manuel Villasuso. Don Villasuso was the last mezcalero of the last noblewoman in Mexico, running the distillery in her hacienda in Guanajuato. Malena and her husband, Pedro Valdes, continue the traditions of Don Villasuso at the fabrica he established on the parcels he was granted when that hacienda was disbanded. And those steam-cooked Salmiana are featured in this beer!


This beer was brewed using aged hops to allow the naturally occurring microflora of Guanajuato to express itself. This results in a wonderfully unique beer with notes of sultanas, poblano peppers, under-ripe strawberries, dried dark cherries, figs, and light roast Geisha coffee beans with a touch of acidity on the finish. 


A portion of sales will be donated to S.A.C.R.E.D. to replant agave.
