Etudes is a series where we take time to focus on a specific ingredient that we source from our local suppliers. Our goal is to learn more about these ingredients and what they have to offer while creating something beautiful and delicious.
Volume One focuses on spelt, an ingredient we use often but always as a supporting character. To better understand spelt we sourced three different versions; malted spelt from Sugar Creek, unmalted and flaked spelt from Janie’s Mill. What focusing on spelt has shown us is a very robust yet delicate nutty character and a beautiful, fluffy mouth feel. Our yeast also seems to love spelt, giving us notes of cardamom, pineapple, Fruitstripe gum, nutmeg, and peaches.
