This version was conditioned on Montmorency cherries that were previously used in Levain to add a subtle depth to the flavor profile. Notes of kaffir lime leaves, white flowers, Meyer lemon, spelt, freshly washed linens, a hint of cherry, and baking spices lead to a dry succinct finish
