Welcome to Joiners, the Bière de Miel with Tim and Danny where we explore the world of hospitality by chatting with its most colorful characters. This week we have a guest from Harvard, IL, 25 lbs of honey from the Tierney Family Farm. We added this beautiful honey at the tail end of fermentation which allowed the sugar to ferment out while maintaining the delicate, unique aromatics and the microflora of the Tierney Farm. It has notes of white flowers, lemon zest, dried peaches, light caramel, and a well structured, dry finish. Pairs perfectly with your death row meal, your favorite hidden gem spot, or Culvers.
