About the Lambic mug:

These beautiful mugs are designed and hand-thrown by our label artist Joe Kraft. Prior to finding his love of drawing and printmaking Joe focused on ceramics. He has a BFA in ceramics from Alfred University. After graduating he was awarded a Windgate Fellowship Grant and spent time traveling the Southwest to experience and research Land Art.

Only 12 of these were made for our levain release party. We only have a few left.

-Levain 2023 Saison Fermented in Oak Barrels with our Mixed Culture

Levain is a long time coming. The culmination of our thoughts, feelings, and beliefs about the microorganisms that allow us to make beer. Mashed with raw spelt from Janie’s Mill, hopped with aged whole cone hops then fermented and ripened in used oak wine barrels with a blend of our house saison yeast, our favorite strains of brettanomyces, dregs from bottles that inspire us, and microorganisms sourced from my 6 year old sourdough starter.

Levain is deeply complex yet spryly drinkable with a delightful acidity. You’ll find notes of limeade, lemon zest, lychee, mango, musky leather, earthy blue cheese, wet hay, pink starburst, papaya, black cherry, and a touch of oaky vanillin and spice. This beer took nearly 3.5 years to fully mature.

-Levain 2023 Conditioned on Michigan Raspberries

After blending we rested this expression of Levain on 4 pounds per gallon of red raspberries from Mick Klug Farms Michigan. The berries impart a beautiful, deep ruby hue to the beer and notes of juicy raspberries, strawberry Fun Dip, lemon zest, tanned leather, and a touch of minerality lead to a mouthwateringly acidic finish.

-Levain 2023 Conditioned on Fresh Bergamot

After blending we rested this expression of Levain on the zest and juice of fresh bergamot from Bhumi Growers in New Jersey. The addition of unique and vibrant citrus contributed notes of Fruity Pebbles, Earl Gray tea, white flowers, and cardamom, all of which integrate wonderfully with the funk, depth, and complexity of base beer.

-Levain 2023 Conditioned on Carbonic Macerated Bosc Pears

Pear is a difficult, subtle fruit to work with in beer. Most of its aromatic an flavors are already present so finding a way to make the character of pear stand out can be a real challenge. To achieve that goal we took roughly 7 pounds of whole Bosc Pears, stems and all, from Mick Klug Farms and had them undergo carbonic maceration for 2 weeks before transferring Levain on top and allowing them to undergo secondary fermentation with the beer.

The result is a unique delicate beer with notes of ripe pear, light baking spices, freshly tilled soil, and a distinct, slightly oily mouthfeel. We only packaged 108 bottles of this beer and it will be almost exclusively available on our webstore.
