The Finer Points of Bad Behavior Volume XV: Balaton Cherries and Brettanomyces Lambicus

The Finer Points of Bad Behavior is an ever evolving series of beers that pairs seasonal ingredients with unique strains of yeast specifically chosen to compliment, contrast, and elevate each other.

Volume XV pairs Balaton Cherries from our friends at Mick Klug Farms and Brettanomyces Lambicus which is known for its cherry pie meets leather characteristics. It pours a deep, Burgundy-red with almost pastel pink foam. It has notes of dried cherries, lemon zest, leathery cherry skins, strawberry Fun Dip, earthy moss, and a fruitiness akin to Gamay wines from Beaujolais. It has a full, luscious body and a mildly tart and lightly tannic finish.
